My husband and I both cook and we both enjoy it. We spend a lot of time in our kitchen and even though there are only the two of us living here now we still cook real dinners every night and on special occasions we cook for friends and family. I have never understood, frankly, people who don’t have food on hand. My refrigerated is always full. We are lucky, I realize. Around the world there are way too many people who go without. I was introduced to Heifer International many years ago and often “gift” friends and family with a contribution to Heifer. My favorite gift is to designate my donation for chickens to be provided to a family in need. You can always eat if you have eggs in the house. At least, that’s what I have always believed.
Before we even talk about cooking, don’t you agree that an egg is one of the loveliest things in life? A pure white egg is just about the perfect object, fitting perfectly in the palm of your hand. Then there are beautiful brown eggs and my friend, Reva’s chickens lay pale blue eggs—sublime! I start nearly every day with two eggs, cracked into a tiny skillet and cooked until the whites are firm and opaque and the yolks are still golden and semi-liquid. Comfort dinner is scrambled eggs and bacon, or an omelette with fresh garden vegetables and cheese folded into it. Cakes, cookies, souffles, and quiches—egg drop soup and egg noodles and egg salad sandwiches. I can’t imagine cooking without eggs.
